Chickpea Blondies

Satisfy your sweet tooth while eating REAL ingredients! No one will ever know that these tasty blondies are made with a base of chickpeas…it’ll be our little secret πŸ˜‰

This flourless treat is packed with plant-based protein and is high in fiber.

 

Chickpea Blondies

Ingredients

  • 1 can chickpeas, rinsed and drained
  • 1/2 cup peanut butter or almond butter
  • 1/3 cup pure maple syrup or honey
  • 1 tbsp vanilla extract
  • 1 tbsp organic virgin coconut oil, melted
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup non dairy milk
  • 1/2 cup Enjoy Life chocolate chips
  • another 1/4 cup chocolate chips melted with 2 tsp coconut oil to drizzle on top

Directions

  1. Preheat oven to 350
  2. Mix all ingredients (except chocolate chips) in a food processor or blender until smooth.
  3. Stir in chocolate chips
  4. Pour into an 8×8 pan and bake for 20-25 minutes
  5. Let cool and drizzle with melted chocolate
