Homemade Choco Tacos {GF & DF}

We’re gonna put the ice cream man out of business with these babies! Who remembers Choco Tacos? Do they still even make them? I might just be showing my age 😉

We celebrated my son’s 13th birthday recently and it happened to fall on his favorite day of the week- Taco Tuesday! Instead of the usual tacos we eat every week, I thought I’d get creative and do something special for his big day ❤

I remembered Choco Tacos from when I was a kid and decided to create a version that our whole family could enjoy.  Although they look pretty fancy, it was actually a very simple dessert to make(as long as you have a pizzelle maker!). After you make the pizzelles, just fill with ice cream, add chocolate & toppings and you now have a DESSERT TACO that no one will forget anytime soon!

Homemade Choco Tacos {GF & DF}

 

Ingredients

  • GF & DF Italian Pizzelles
  • 1-2 pints So Delicious Dairy Free Ice Cream(we used Very Vanilla Cashew Milk)
  • Enjoy Life Foods Chocolate Chunks
  • 1-2 tsp coconut oil
  • chopped nuts, seeds or sprinkles for topping

Directions

  1. Make Pizzelles according to directions one at a time(unless you have a helper to help fold the second pizzelle before it cools). Instead of letting cool flat, fold them into “taco” shaped shells. I used a mason jar lid to help form them(See pic below). Hold for a few seconds until they start to cool and stay formed. Use a kitchen towel or gloves if they are too hot!
  2. Once completely cool, fill with your choice of ice cream and put them in the freezer to keep cold.
  3. In the mean time, on low heat, melt chocolate chunks with 1-2 tsp of coconut oil on the stovetop.
  4. Dip the shells in the chocolate, or use a basting brush to paint on the chocolate.
  5. Sprinkle with chopped nuts, seeds or get festive with some colorful sprinkles!
  6. Store in the freezer until ready to serve.
