Coconut Chia Blueberry Muffins

Ingredients

Coconut Flour

sea salt

baking soda

raw honey

coconut or almond milk

eggs

vanilla extract

extra virgin coconut oil
melted
¼
cup
chia seeds

cup
blueberries
Instructions
Preheat oven to 350°
Mix coconut flour, salt and baking soda in a large bowl, set aside.
In a blender, mix the milk, honey, eggs, coconut oil and vanilla.
Add chia seeds and blend on low.
Pour the wet ingredients in a bowl with the dry ingredients and mix well.
Gently stir in the blueberries.
Spoon into a greased muffin pan and bake 25-30mins until golden brown
