Coconut Chia Blueberry Muffins

Ingredients

  • 1 cup Coconut Flour
  • ½ teaspoon sea salt
  • 1 teaspoon baking soda
  • cup raw honey
  • 1 cup coconut or almond milk
  • 6 eggs
  • 2 teaspoon vanilla extract
  • ¼ cup extra virgin coconut oil melted
  • ¼ cup chia seeds
  • 1 cup blueberries

Instructions

  • Preheat oven to 350°
  • Mix coconut flour, salt and baking soda in a large bowl, set aside.
  • In a blender, mix the milk, honey, eggs, coconut oil and vanilla.
  • Add chia seeds and blend on low.
  • Pour the wet ingredients in a bowl with the dry ingredients and mix well.
  • Gently stir in the blueberries.
  • Spoon into a greased muffin pan and bake 25-30mins until golden brown
