This Almond Flour Irish Soda Bread is a simple quick bread that's prepped in about 15 minutes. Made with almond flour as the base, it's nutrient dense, yet has a touch of sweetness that will keep you coming back for more! Gluten-free, dairy-free & grain-free.

Ingredients

  • 2 cups Almond Flour
  • ¾ cup Tapioca Flour or Arrowroot Starch
  • 3 tablespoon Sugar
  • 1 teaspoon Baking Soda
  • 1 tsp Baking Powder
  • ½ teaspoon Salt
  • 2 tablespoon Ground Flax Seeds
  • 1 tablespoon Apple Cider Vinegar
  • 2 Eggs
  • 2 tablespoon Unsweetened Plant-Based Milk
  • ¼ cup Melted Coconut Oil
  • 1 cup Raisins

Instructions

  • Preheat oven to 350° and prepare a pie pan covered with greased parchment paper.
  • Whisk together the flours, sugar, raisins, salt, baking soda, baking powder & flax meal in a medium sized bowl. Stir ingredients by spoon to mix.
  • In a separate small bowl, combine eggs, milk and vinegar. Let sit for 5 minutes.
  • Pour the egg mixture into the flour mix and stir well.
  • Add the melted coconut oil
  • Transfer dough to your prepared pie dish, making an oval shape.
  • Using a sharp serrated knife to score with an X.
  • Transfer to the oven and bake for 25-30 minutes, until the top is golden brown.
  • Let cool for at least 15 minutes before slicing. If you slice while it's too hot, it will be crumbly. Serve with butter or your favorite jam.
