Grilled Salmon with Mango Salsa

Ingredients

Mango Salsa

  • 1 Mango diced
  • 1 cup English Cucumber diced
  • cup Red Onion diced
  • cup Cilantro chopped
  • 1 Lime juiced
  • 2 teaspoon olive oil
  • ¼ teaspoon Salt or to taste
  • ½ Jalapeno seeded and diced, optional

Salmon Marinade

  • 2 tablespoon Oil
  • 2 cloves Garlic minced
  • 1 Lime juiced
  • Salt & Pepper to taste

Instructions

  • Whisk together the ingredients for the salmon marinade in a small bowl.
  • Place salmon in a baking dish and pour the marinade on top. Cover and place in fridge to marinate for at least 30 minutes.
  • Meanwhile, combine all ingredients for the salsa together in a bowl-set aside.
  • Preheat the grill to medium/high heat. Brush grates with oil if needed.
  • Grill salmon skin side down for about 6-8 minutes, keeping the lid closed as the fish cooks. Pour on any leftover marinade while cooking. Then flip to the other side for the last 1-2 minutes for browning. You'll know the salmon is done when it flakes easily.
  • Top with mango salsa and serve with desired sides.

Notes

You can also broil the salmon in the oven! Broil 8-10 minutes until the salmon is browned and color is lightened.
