In the Bowl
- 1-2 cups Rice or Quinoa cooked according to package directions
- 1 lb Ground Beef, Turkey or Chicken seasoned with Taco Seasoning & ¼ cup water
Creamy Avocado Dressing
- 1 large Ripe Avocado
- ¼ cup Oil I use avocado oil
- 2 cloves Garlic
- ½ teaspoon Salt or to taste
- 1 Lime juiced
- ⅓ cup Fresh Cilantro Leaves packed
- ⅓ cup Water plus more for thinner consistancy
- 1 Jalapeno, stems and seeds removed optional
Topping Ideas
- Black Beans rinsed & drained
- Bell Peppers diced
- Tomatoes diced
- Onion chopped
- Lettuce shredded
- Sweet Corn
- Salsa
While rice is cooking, heat 1 tablespoon oil in a skillet. Cook & crumble meat. Drain fat if needed. Once cooked through, add taco seasoning plus ¼ cup water. Mix well and keep heat on low.
Add all dressing ingredients to a food processor and blend until creamy. If you would like a thinner consistency, add more water 1 tablespoon at a time.
Using the rice as a base, layer meat, black beans, and veggies in a bowl then top with the creamy avocado dressing.
