Equipment

  • Heavy Duty Foil
  • Grill

Ingredients

  • 2 tablespoon Oil
  • 2 Chicken Breasts cut in thin strips
  • 1 Green Peppper sliced thin
  • 1 Red Pepper sliced thin
  • ½ Onion cut into thin half moons

Spices

  • 1 tablespoon Chili Powder
  • 1 teaspoon Cumin
  • ½ teaspoon Paprika
  • ½ teaspoon Garlic Powder
  • ½ teaspoon Onion Powder
  • 1 Lime juiced
  • 1 teaspoon Salt
  • Pepper to taste

Instructions

  • Preheat the grill to medium heat. If cooking in the oven, or on a smoker with manual temperature control, preheat to 400°.
  • In a large bowl, toss the chicken strips, peppers & onions with the oil and spices.
  • Cut 4 large squares of foil, then place the chicken mixture into the center of the foil. Fold the foil around the mixture to close completely.
  • Cook the foil packets for about 20 minutes.
  • Carefully remove the foil packets from the grill-they will be hot! Serve with your favorite fajita toppings and enjoy over prepared rice or on soft gluten-free tortillas.
