Gluten-Free Peach Cobbler Skillet

This Gluten-Free Peach Cobbler Skillet is the ultimate summer dessert! Baked in a cast iron skillet, the crust gets crisp on the edges, soft in the center, and every bite is filled with sweet peaches. Top with vanilla ice cream, grab your spoons and dig in!

Ingredients

  • ½ cup Salted Butter 1 stick; can sub dairy-free

Batter

  • 1 cup Gluten-Free All Purpose Flour
  • 2 teaspoon Baking Powder
  • ¾ cup Granulated Sugar
  • ¼ teaspoon Salt
  • ¾ cup Milk can sub dairy-free

Peach Fillling

  • 4-5 cups Peaches sliced; about 7 peaches depending on size
  • ½ teaspoon Cinnamon
  • ¼ cup Brown Sugar
  • ¼ cup Gluten-Free All Purpose Flour or 2 tablespoon cornstarch; add to thicken if your peaches are extra ripe and juicy.

Instructions

  • Preheat oven to 375°. Melt butter in the bottom of a cast iron skillet while the oven preheats. Remove from the oven before the butter starts to brown.
  • Toss peaches in a large bowl with brown sugar and cinnamon. *If your peaches are extra ripe & juicy, add ¼ cup flour or 2 tablespoon cornstarch to thicken.
  • In a separate bowl, mix flour, sugar, baking powder and salt. Slowly add milk stirring until a smoothe batter forms.
  • Pour flour mixture over the melted butter, then pour the peach mixture on top. DO NOT MIX!
  • Bake at 375° for about 40 minutes or until golden brown and center is set.
  • Serve warm topped with vanilla ice cream. Enjoy!
