Falafel Bowl with Turmeric Rice & Dairy-Free Tzatziki Sauce

Falafels
2Cans Chickpeasdrained and rinsed
¼cupFresh parsleychopped
3clovesGarlic
1teaspoonCumin
¾teaspoonSalt
½Lemonjuiced
1teaspoonBaking Powder
4tablespoonGF All-Purpose Flour
¼teaspoonCayenne Pepperoptional
2-3tablespoonAvocado Oilfor sauteing
Turmeric Rice
1cupRice
2cupsVegetable Broth
½teaspoonTurmeric powder
½teaspoonSalt
½Red pepperdiced
½ Oniondiced
1tablespoonOil
Dairy Free Tzatziki Sauce
1Container Kite Hill Foods Dairy Free Plain Greek Syle Yogurt5oz
1tablespoonFresh Dillchopped
½English Cucumbergrated
1Garlic Cloveminced
1tablespoonFresh Lemon Juice
Dash of salt & pepper to taste

Instructions
Combine chickpeas, parsley, garlic, cumin, and lemon into a food processor. Process on high until everything is blended and smooth. Scraping down sides as needed.
Add in the flour and baking powder. Pulse until thoroughly combined.
Roll your falafel into small balls or patties.
Add 2 tablespoon oil to a large skillet and heat to med-high.
Cook the falafel on all sides until golden brown and crispy, adding more oil as needed.
Turmeric Rice
Heat oil in a skillet and saute onion & red pepper for 1-2 mins.
Add rice to the skillet and saute for 2-3 minutes.
Pour in broth, salt and turmeric. Mix well and bring to a boil.
Cover and lower heat to a simmer. Cook according to package directions for rice.
Dairy Free Tzatziki Sauce
Place shredded cucumber on a papertowel and squeeze to drain out excess liquid.
Combine all ingredients in a small bowl. Mix well or blend for a smoother consistancy.
Season with salt and pepper to taste. Store in an airtight container in the fridge until ready to use.
