Philly Style Irish Potato Candy

This Philly Style Irish Potato Candy is the perfect addition to your St. Patrick's Day Fesitivities! It's a no-bake recipe, filled with a delicious coconut cream dough, then rolled into cinnamon making them look like small potatoes.

Ingredients

  • 1 box Confectioner's Sugar
  • ¼ cup Butter melted; use vegan butter for dairy-free
  • 1 tablespoon Pure Vanilla Extract
  • 1 cup Shredded Coconut unsweetened
  • 2 tablespoon Water may need to add a little more
  • Cinnamon for rolling

Instructions

  • Mix all ingredients(Except cinnamon!) in a medium bowl.
  • Mix well(dough will be hard) and let sit in the fridge for 45min-1hr. 
  • Form small balls(potatoes!). Pour some cinnamon in a separate small bowl, then roll your potatoes into the cinnamon until all sides are covered.
  • Serve immediately or keep refrigerated until ready to eat.
