- Preheat your oven to 350°F and grease a loaf pan. Line with parchment paper for extra easy removal of the loaf after baking.
- In a large bowl, mash the bananas until mostly smooth.
- Add eggs, oil, sugar, and vanilla. Mix until combined.
- Slowly whisk in gluten free flour, baking soda, and salt until combined. Don't overmix.
- Fold in any add-ins if using.
- Pour the batter into your prepared loaf pan.
- Bake for 50 minutes, or until a toothpick comes out clean.
- Let cool before slicing to allow it to set and not crumble. Enjoy!
