- Wash and dice your fresh strawberries into small pieces. The smaller the pieces, the easier the clusters will hold together. Pat them dry with a paper towel so the yogurt mixture doesn’t get watery.
- In a mixing bowl, combine the strawberries, yogurt sweetener and vanilla extract. Stir until everything is well combined and the strawberries are evenly coated.
- Line a baking sheet with parchment paper. Using a spoon or small cookie scoop, drop 2 tablespoon sized portions of the strawberry yogurt mixture onto the baking sheet.
- Place the baking sheet in the freezer for 1–2 hours, or until the clusters are completely frozen and firm.
- In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30 second intervals, stirring between each, until the chocolate is smooth and fully melted.
- Remove the frozen yogurt clusters from the freezer. Using a fork or spoon, dip each cluster into the melted chocolate, making sure it’s coated. Place the dipped clusters back onto the parchment-lined tray.
- Return the tray to the freezer for another 10–15 minutes so the chocolate can fully set. Once the chocolate hardens, your frozen yogurt clusters are ready to enjoy!
