Chocolate covered strawberry yogurt clusters made with Greek yogurt. An easy high-protein frozen snack that’s naturally gluten free.

Ingredients
  

  • 2 cups Fresh Strawberries diced
  • 1 cup Vanilla Greek Yogurt
  • 1 teaspoon Vanilla Extract
  • cups Chocolate Chips
  • 1 tablespoon Coconut Oil
  • 1 tablespoon Honey or Maple Syrup

Method
 

  1. Wash and dice your fresh strawberries into small pieces. The smaller the pieces, the easier the clusters will hold together. Pat them dry with a paper towel so the yogurt mixture doesn’t get watery.
  2. In a mixing bowl, combine the strawberries, yogurt sweetener and vanilla extract. Stir until everything is well combined and the strawberries are evenly coated.
  3. Line a baking sheet with parchment paper. Using a spoon or small cookie scoop, drop 2 tablespoon sized portions of the strawberry yogurt mixture onto the baking sheet.
  4. Place the baking sheet in the freezer for 1–2 hours, or until the clusters are completely frozen and firm.
  5. In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30 second intervals, stirring between each, until the chocolate is smooth and fully melted.
  6. Remove the frozen yogurt clusters from the freezer. Using a fork or spoon, dip each cluster into the melted chocolate, making sure it’s coated. Place the dipped clusters back onto the parchment-lined tray.
  7. Return the tray to the freezer for another 10–15 minutes so the chocolate can fully set. Once the chocolate hardens, your frozen yogurt clusters are ready to enjoy!
