Ingredients
  

  • 3 Overripe Bananas
  • 2 Eggs
  • ¼ cup Sugar
  • 1 teaspoon Baking Soda
  • ¼ teaspoon Salt
  • 1 teaspoon Vanilla Extract
  • cup Oil
  • ½ cup Chocolate Chips Optional

Method
 

  1. Preheat your oven to 350°F and line a muffin tin with paper liners or lightly grease each cup.
  2. In a large bowl, whisk together the gluten free flour, baking soda, and salt.
  3. In another bowl, mash the bananas until smooth. Then whisk in the sugar, eggs, oil and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients. Mix gently until no streaks of flour remain. If you're adding chocolate chips or nuts, fold them in now.
  5. Fill each muffin cup about ¾ full. Bake for 20 minutes or until a toothpick inserted into the center comes out clean. Allow the muffins to cool in the pan for about 5 minutes.
