Ingredients
  

Coffee Cake Batter
  • 2 cups Gluten Free 1:1 Flour
  • 2 teaspoon Baking Powder
  • 1 stick Butter salted
  • 2 Eggs
  • cup Milk
  • 1 cup Sour Cream or Plain Greek Yogurt
  • ¾ cup Granulated Sugar
  • teaspoon Vanilla Extract
  • ¼ teaspoon Salt
Cinnamon Swirl
  • ½ cup Brown Sugar
  • 1 tablespoon Cinnamon
  • 3 tablespoon Butter Softened
Crumble Topping
  • 5 tablespoon Butter Softened
  • ¾ cup Flour
  • ½ cup Brown Sugar
  • 2 teaspoon Cinnamon
Optional Glaze
  • ½ cup Powdered Sugar
  • 1-2 tablespoon Milk
  • ½ teaspoon Vanilla Extract

Method
 

  1. Preheat your oven to 350°F. Grease and line an 8x8 baking pan with parchment paper.
  2. In the bowl of a mixer, cream together the butter and sugar, scraping down the sides occasionally. Add the vanilla and eggs, continue mixing.
  3. In a separate bowl, mix together the flour, baking powder and salt. Add one half of it to the mixer, and when mostly combined, add the milk. Once the milk is mostly incorporated, add the rest of the flour.
  4. To Make the Filling: In a small bowl, stir together the brown sugar, butter and cinnamon. Cut in the butter with a fork or your fingers. Set aside.
  5. In another small bowl, combine ingredients for the topping: Mix together the flour, brown sugar, and cinnamon. Cut in the cold butter using a fork (or your fingers) until crumbly. Set aside.
  6. Layer the cake: Spread half of the batter into your prepared pan. Sprinkle the cinnamon sugar mixture evenly over the top. Add the remaining batter and gently spread it out trying your best not to disturb the cinnamon filling too much!
  7. Sprinkle the crumb topping evenly over the batter. Press gently into the batter to help it stick.
  8. Bake for about 40 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool for at least 15–20 minutes before slicing. Add optional glaze if desired and serve warm for that soft, cozy texture.
