Ingredients

  • 1 package Gluten Free Rolls halved
  • 1 lb Deli Roast Beef sliced thin
  • 3 cups Beef Broth low sodium
  • 2 tablespoon Cornstarch
  • 2 cloves Garlic minced
  • ½ teaspoon Thyme, Rosemary and Onion Powder each
  • ¼ teaspoon Salt and Pepper to taste
Carmelized Onions
  • 2 Sweet Onions
  • 2 tablespoon Butter or Oil
  • 1 teaspoon sugar
  • Pinch of salt

Method

Carmelize the Onions
  1. Heat a skillet over medium-low and add butter or olive oil. Toss in the sliced onions with a pinch of salt and the teaspoon of sugar. Cook slowly, stirring often, until the onions turn golden brown and sweet—this usually takes 20–25 minutes. Don’t rush the process; the depth of flavor comes from patience.
Make the Au Jus
  1. In a medium saucepan, combine beef broth, garlic, and spices. Whisk in the cornstarch until dissolved in the liquid then heat until boiling. Simmer gently for 10 minutes to let the sauce thicken.
  2. Place the roast beef slices directly into the simmering au jus for 1–2 minutes. This keeps the beef tender and flavorful without drying it out.
Assemble the Sandwiches
  1. On a baking sheet, toast your gluten-free sandwich rolls lightly in the oven. This helps them stand up to the juicy filling. Once toasted, remove from the oven and layer the warm roast beef onto each roll, top with caramelized onions, and add cheese, then put under the broiler for a few minutes until cheese is melted and golden.
  2. Serve warm with a small bowl of dipping sauce. Enjoy!
