Ingredients
  

Pumpkin Pie Layer
  • 15 oz can pumpkin puree
  • ¾ cup granulated sugar
  • 3 large eggs
  • 2 teaspoon pumpkin pie spice
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • ½ cup heavy cream half and half also works; use full fat coconut cream for dairy free
Cinnamon Streusel

Method
 

  1. Preheat oven to 375°. Butter a 10in cast iron skillet or 9x9 baking dish
  2. In a large bowl, whisk together the pumpkin puree, sugar, eggs, pumpkin pie spice, salt and vanilla extract. Stir in heavy cream until well combined then pour into your prepared baking dish.
  3. In a separate bowl, whisk together the flour, sugar, cinnamon and salt. Add chunks of softened butter. Press mixture to get her with your fingers or the back of a fork until crumbly. Spread Streusel topping on top of the pumpkin mixture in an even layer.
  4. Bake 45 minutes until filling is set.
  5. Let cool for at least 10 minutes the serve topped with icream or whipped cream. Enjoy!
