- Preheat your oven to 350°F. Line a loaf pan with parchment paper or lightly grease it.
- In a large bowl whisk together gluten free flour, baking powder, baking soda, salt. Set aside.
- In another bowl combine the sugar, eggs, oil, milk, vanilla extract. Whisk until smooth.
- Add the wet ingredients to the dry ingredients and mix until just combined. Be careful not to overmix the batter. Fold in the diced strawberries gently so they stay intact.
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean. Let the bread cool in the pan for about 10–15 minutes, then transfer to a wire rack to cool completely before adding frosting.
Make the Frosting
- While the loaf is baking, in a small bowl whisk together the powdered sugar, milk, vanilla and strawberries. Start with one tablespoon of milk and add more if needed until you get a smooth, pourable glaze. Drizzle the frosting over the cooled bread and let it set for about 10 minutes before slicing.
