Ingredients
  

  • 2 cups Gluten Free 1:1 Flour
  • 2 teaspoon Baking Powder
  • ½ teaspoon Salt
  • 2 Eggs
  • ¾ cup Sugar
  • ½ cup Oil
  • ½ cup Milk Use Unsweetened Plant Based for Dairy Free
  • 1 teaspoon Vanilla Extract
  • cups Diced Fresh Strawberries
  • 2 tablespoon Gluten Free Flour
Fresh Strawberry Glaze
  • 1 cup Powdered Sugar
  • ½ teaspoon Vanilla Extract
  • cup Diced Fresh Strawberries
  • 1-2 tablespoon Milk Use Unsweetened Plant Based for Dairy Free

  1. Preheat your oven to 350°F. Line a loaf pan with parchment paper or lightly grease it.
  2. In a large bowl whisk together gluten free flour, baking powder, baking soda, salt. Set aside.
  3. In another bowl combine the sugar, eggs, oil, milk, vanilla extract. Whisk until smooth.
  4. Add the wet ingredients to the dry ingredients and mix until just combined. Be careful not to overmix the batter. Fold in the diced strawberries gently so they stay intact.
  5. Pour the batter into the prepared loaf pan and spread evenly.
  6. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean. Let the bread cool in the pan for about 10–15 minutes, then transfer to a wire rack to cool completely before adding frosting.
Make the Frosting
  1. While the loaf is baking, in a small bowl whisk together the powdered sugar, milk, vanilla and strawberries. Start with one tablespoon of milk and add more if needed until you get a smooth, pourable glaze. Drizzle the frosting over the cooled bread and let it set for about 10 minutes before slicing.
