One-Pan Taco Skillet

Get ready to throw everything in a pan and call it Taco Tuesday! This easy One-Pan Taco Skillet is on the table in less than thirty minutes, and is a kid-friendly family favorite. Gluten-Free and Dairy-Free optional.

Ingredients

  • 1 lb Lean Ground Beef or Turkey
  • 1 Small Onion chopped
  • 1 cup Long Grain Rice If using instant rice, follow package directions for the correct amount of water
  • 2 cups Water or broth for more flavor
  • 1 cup Tomato Sauce or your favorite marinara
  • 1 can Black Beans drained & rinsed
  • 1 cup Corn thaw if frozen
  • Taco Seasoning

Optional Toppings

  • Cilantro
  • Tomatoes
  • Peppers
  • Shredded Lettuce
  • Avocado

Instructions

  • In a large skillet, brown and crumble ground beef. Drain excess grease.
  • Add onions to the pan and cook a few minutes until softened.
  • Add water, tomato sauce and taco seasoning, mix well.
  • Let the liquid come to a boil, then add rice. Lower heat. Cover and cook rice according to package directions until tender. Stir halfway through and add a little more water if needed.
  • Chop up your veggies and prep other toppings while the rice is cooking.
  • When the rice is finished cooking, remove lid and stir in beans and corn. Mix well.
  • Add desired toppings & enjoy!

Notes

*Time saving tip: Plan ahead and have your toppings already chopped to make this quick meal even quicker!
