Ingredients
  

  • 3 over-ripe bananas
  • 4 eggs
  • ¼ cup coconut sugar can swap with granulated sugar if desired
  • 2 tablespoons coconut oil melted (plus some extra for greasing the pan)
  • 2 teaspoons vanilla extract
  • 2 cups almond flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup add-ins: chocolate chips or nuts optional

  1. Preheat oven to 350°
  2. Grease muffin pan with melted coconut oil
  3. Combine all ingredients(except add-ins) in a stand mixer. Mix until batter forms.
  4. If you choose to use add-ins, stir them in now.
  5. Pour batter into greased muffin pan, filling almost to the top.
  6. Bake about 20-25 minutes or until golden brown- let cool before removing.
