This Almond Flour Irish Soda Bread is a simple quick bread that's prepped in about 15 minutes. Made with almond flour as the base, it's nutrient dense, yet has a touch of sweetness that will keep you coming back for more! Gluten-free, dairy-free & grain-free.

Ingredients
  

  • 2 cups Almond Flour
  • ¾ cup Tapioca Flour or Arrowroot Starch
  • 3 tablespoon Sugar
  • 1 teaspoon Baking Soda
  • 1 tsp Baking Powder
  • ½ teaspoon Salt
  • 2 tablespoon Ground Flax Seeds
  • 1 tablespoon Apple Cider Vinegar
  • 2 Eggs
  • 2 tablespoon Unsweetened Plant-Based Milk
  • ¼ cup Melted Coconut Oil
  • 1 cup Raisins

Method
 

  1. Preheat oven to 350° and prepare a pie pan covered with greased parchment paper.
  2. Whisk together the flours, sugar, raisins, salt, baking soda, baking powder & flax meal in a medium sized bowl. Stir ingredients by spoon to mix.
  3. In a separate small bowl, combine eggs, milk and vinegar. Let sit for 5 minutes.
  4. Pour the egg mixture into the flour mix and stir well.
  5. Add the melted coconut oil
  6. Transfer dough to your prepared pie dish, making an oval shape.
  7. Using a sharp serrated knife to score with an X.
  8. Transfer to the oven and bake for 25-30 minutes, until the top is golden brown.
  9. Let cool for at least 15 minutes before slicing. If you slice while it's too hot, it will be crumbly. Serve with butter or your favorite jam.
