  1. Preheat oven to 350°.
  2. In a large skillet over medium heat, cook the ground beef until browned and fully cooked. Drain excess grease.
  3. Stir the can of refried beans directly into the seasoned ground beef. Mix until fully combined and warmed through.
  4. Add the taco seasoning according to packet directions (usually with a little water). Let it simmer for a few minutes so the beef gets fully coated and flavorful.
  5. Spread a thin layer of enchilada sauce on the bottom of a baking dish. Spoon the beef and bean mixture down the center of each tortilla, sprinkle a little cheese inside, then roll tightly. Place seam-side down in the dish.
  6. Pour the remaining enchilada sauce evenly over the top. Sprinkle generously with the shredded cheese.
  7. Bake uncovered for 20 minutes, until the cheese is melted and bubbly. Let the enchiladas rest for 5–10 minutes before serving so they hold together nicely when plated.
