- Preheat oven to 350°.
- In a large skillet over medium heat, cook the ground beef until browned and fully cooked. Drain excess grease.
- Stir the can of refried beans directly into the seasoned ground beef. Mix until fully combined and warmed through.
- Add the taco seasoning according to packet directions (usually with a little water). Let it simmer for a few minutes so the beef gets fully coated and flavorful.
- Spread a thin layer of enchilada sauce on the bottom of a baking dish. Spoon the beef and bean mixture down the center of each tortilla, sprinkle a little cheese inside, then roll tightly. Place seam-side down in the dish.
- Pour the remaining enchilada sauce evenly over the top. Sprinkle generously with the shredded cheese.
- Bake uncovered for 20 minutes, until the cheese is melted and bubbly. Let the enchiladas rest for 5–10 minutes before serving so they hold together nicely when plated.
