- Cross-contamination
To keep this enchilada recipe Celiac safe, use:

How to Make Gluten Free Enchiladas
Step 1: Prep the Filling
In a large skillet over medium heat, cook the ground beef until browned and fully cooked. Drain excess grease.
Stir the can of refried beans directly into the seasoned ground beef.
Add taco seasoning. Let simmer for 2-3 minutes so everything gets coated and flavorful.
Mix until fully combined and warmed through. Refried beans makes the filling creamy, hearty, and extra satisfying plus it stretches the beef to feed more people.
Step 3: Assemble
Preheat oven to 375°F.
Spread a thin layer of enchilada sauce on the bottom of a 9x13 baking dish.
Add filling down the center of each tortilla, roll tightly, and place seam-side down in the dish.
Step 4: Sauce & Cheese
Pour remaining enchilada sauce over the top and sprinkle generously with the cheese.
Step 5: Bake
Bake uncovered for 20 minutes until bubbly and melted.
Let rest 5-10 minutes before serving (this helps them set up perfectly).
