Ingredients
  

  • 1 can Black Beans drained & rinsed
  • ½ Avocado
  • 2 Eggs
  • ½ cup Unsweetened Cocoa Powder
  • ½ cup Sugar
  • 2 tablespoon Coconut Oil melted
  • ½ teaspoon Baking Powder
  • ¼ teaspoon Baking Soda
  • ¼ teaspoon Salt
  • 1 teaspoon Pure Peppermint Extract
  • ½ cup Chocolate Chips plus some extra for topping!

Method
 

  1. Preheat oven to 350° and grease a square 8x8 pan
  2. Blend all ingredients(except chocolate chips!) in a blender or food processor.
  3. Stir in ½ cup chocolate chips.
  4. Poor batter into greased 8x8 pan. Smooth out the top with the back of a spoon.
  5. Top with remaining chocolate chips and bake for 30-35mins.
