Gluten Free Apple Cinnamon Quick Bread

Ingredients
  

  • 2 cups Gluten-Free 1:1 Flour
  • 2 cups Apples Peeled and Diced
  • 2 Eggs
  • ½ cup Oil I used avocado
  • cup Water
  • ½ cup Brown Sugar
  • ¼ cup Granulated Sugar
  • ½ tsp Salt
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 1.5 tsp Cinnamon
  • 1 tsp Vanilla Extract
Optional Glaze
  • 1 cup Confectioner's Sugar
  • ½ teaspoon Cinnamon
  • 1-2 tablespoon Milk or Unsweeneted Plant-Based Milk start with one, add more to desired thickness

Method
 

  1. Preheat oven to 350°
  2. In a large bowl, mix all of the batter ingredients together, then stir in the apples. You can stir with a spoon, you don't need to use an electric mixer!
  3. Pour batter into a greased or parchment lined loaf pan and bake for 50-60 minutes.
  4. Meanwhile mix together the frosting ingredients then set aside.
  5. After the loaf is done baking, let cool for at least 10 minutes before frosting and slicing. Enjoy!
