- Slice the Roma tomatoes into thin, even rounds. Pat dry with a paper towel to remove excess moisture.
- Cut the fresh mozzarella into small, bite-sized cubes.
- Lay out gluten free crackers on a serving tray in a single layer.
- Place a tomato slice on top of the cracker.
- Add a cube of mozzarella on top of the tomato.
- Place a basil leaf on top of mozzarella slice (fold or rip smaller if large).
- Finish with a drizzle of balsamic glaze right before serving.
