If you need an easy gluten free appetizer that looks fancy but takes almost zero effort, these gluten free caprese cracker stacks are it! They're fresh, colorful, and packed with classic Italian flavor. Think juicy tomatoes, creamy fresh mozzarella, fragrant basil, and a drizzle of balsamic glaze all layered on top of crispy gluten free crackers.

Why You'll Love These Gluten Free Caprese Bites

This recipe is perfect for holiday parties, summer BBQs, game day spreads, bridal showers, or honestly just a random Tuesday when you want something snacky and pretty. Bonus? It's naturally vegetarian and can easily be made dairy free with simple swaps.

  • ✔️ Ready in under 15 minutes
  • ✔️ No cooking required
  • ✔️ Simple, fresh ingredients
  • ✔️ Perfect for entertaining

They're basically a handheld version of a classic Italian caprese salad appetizer, but elevated into a party-ready bite.

What Is Caprese?

Traditional caprese comes from the island of Capri in Italy and features fresh mozzarella, tomatoes, basil, olive oil, and salt. You've probably seen it served as a salad or layered platter.

This recipe keeps those classic flavors but turns them into a gluten free finger food appetizer by stacking everything on a crunchy cracker base.

Ingredients for Gluten Free Caprese Cracker Stacks

You only need a handful of fresh ingredients:

  • Gluten free crackers: Choose sturdy, party-style crackers like gluten free Breton or Schar gluten free entertainment crackers.
  • Balsamic glaze: My favorite certified gluten free balsamic glaze is Nonna Pia's. It's delicious and so much easier than making it from scratch!
  • Roma tomatoes: Easy to slice into uniform rounds and are less likely to make crackers soggy
  • Fresh mozzarella: Cut into bite-sized cubes
  • Fresh basil leaves

Ingredient Tips

Gluten Free Crackers:
Look for thick, sturdy crackers that won't get soggy. Seed-based or rice-based gluten free crackers work beautifully for this easy caprese appetizer recipe.

Mozzarella:
Fresh mozzarella Cut into bite-seized chunks. Aim for pieces that match the size of your tomato slices for balanced bites.

Basil:
Use fresh basil leaves only. Dried basil won't give you that signature caprese flavor. Fresh basil from your summer garden is best!

Balsamic Glaze:
This adds sweetness and tang. Keep it simple by using my favorite certified gluten free balsamic glaze Nonna Pia's.

How to Make Gluten Free Caprese Cracker Stacks

This easy gluten free caprese appetizer comes together in under 15 minutes.

Step 1: Prep the Ingredients

  • Slice Roma tomatoes into even rounds.
  • Cut fresh mozzarella into bite-sized cubes.
  • Gently rinse and dry basil leaves.

Step 2: Assemble the Stacks

On each gluten free cracker:

  1. Add a slice of tomato.
  2. Place a cube of mozzarella on top.
  3. Add a small basil leaf (or fold a larger one).

If your crackers are larger, you can layer mozzarella first, then tomato, then basil on top for a prettier presentation.

Step 3: Finish with Balsamic Glaze

Right before serving, drizzle balsamic glaze over each stack.

That's it. A fresh, easy gluten free appetizer for parties that looks impressive but couldn't be simpler.

How to Keep Gluten Free Crackers from Getting Soggy

When using sliced Roma tomatoes, moisture control is key. Here's how to keep your caprese bites crisp:

  • Pat tomato slices dry before assembling
  • Assemble no more than 1-2 hours before serving
  • Store in a single layer in the refrigerator
  • Add balsamic glaze at the last minute

If prepping ahead, keep all ingredients separate and assemble just before guests arrive.

Caprese Skewers Variation (No Crackers)

If you'd rather skip the crackers entirely, caprese skewers are a naturally gluten free, low carb alternative that's just as beautiful.

How to Make Caprese Skewers

  1. Thread half of a cherry tomato onto a toothpick.
  2. Add a folded basil leaf.
  3. Add a cube of mozzarella.
  4. Repeat if space allows.

Drizzle with balsamic glaze. Skewers travel well and can be assembled slightly ahead of time without worrying about crackers softening.

Whether you're hosting a summer gathering or building a holiday grazing board, this no bake gluten free appetizer is guaranteed to disappear fast!
