You know what time it is! That's right, with the weather getting nicer and summer cookouts to be planned, here is the perfect recipe to get you ready for those outdoor events! These Mediterranean Grilled Chicken Kabobs have been a fan favorite in my house, and now they can be in yours too! So now that you're here and ready to make some delicious kabobs, keep reading to learn just how great this easy recipe is!

Skewered, Sizzled, and Seriously Addictive Grilled Chicken Kabobs!

Like I said above, this kabob recipe is perfect on any summer day! Whether you are hanging by the pool, taking the family over to your neighbor's cookout, or just having a simple meal inside after a long day, these Mediterranean kabobs will make sure you don't go empty-handed. This is one of my favorite recipes, because it seems too good to be true. There is no huge prep time, and these kabobs even ensure a quick cook time! Keep reading to learn just what you need to make these chicken kabobs grilled to perfection!

Here are all the ingredients you will need to make these delicious kabobs! Another thing I love about this recipe is if you don't like something on the skewer then change it! This is how my family and I prefer our Mediterranean Kabobs but you can always substitute with your favorite veggies!

Marinade for Grilled Chicken Kabobs:

  • Lemon (Juiced)
  • Red Wine Vinegar
  • Oregano
  • Avacado Oil
  • Salt
  • Garlic

Meat + Veggies:

  • Chicken Breasts, cubed.
  • Cherry Tomatoes
  • Red Onion
  • Zucchini
  • Peppers

Steps On How to Make this Grilled Chicken Kabobs Recipe!

Now that you have all of your ingredients let's begin to cook!

In a large bowl, first combine all of the ingredients for the marinade. Combine the oil, lemon juice, vinegar and spices and your cubed chicken then mix until your chicken is fully coated. Place your bowl in the fridge and all it to marinate (overnight for ideal flavor) while we begin to prep your veggies!

For the veggies start by dicing them into large chunks that will fit onto your skewers. Once diced coat with a little oil. Once the veggies are prepped take your marinated chicken and place them on the skewers alternating through all the veggies and chicken.

Finally, once all your skewers are prepped pre heat your grill to medium heat. Then cook your marinated chicken kabobs for 8-10 minutes on each side or until the chicken is fully cooked through! Then you're all set to remove the grilled kabobs and enjoy!

Mediterranean Grilled Chicken Kabobs

These Grilled Chicken Kabobs and fresh summer vegetables are marinated in a light Mediterranean-style marinade of lemon juice, olive oil, garlic, and spices, then grilled to perfection.

Ingredients

Marinade

  • 1 Lemon juiced
  • 1 tablespoon Red Wine Vinegar
  • 3 teaspoon Oregano
  • ¼ cup Avocado Oil
  • ½ teaspoon Salt
  • 3 cloves Garlic minced

Skewers

  • Chicken Breasts cubed
  • Cherry Tomatoes
  • Red Onion cut into chunks
  • Zucchini cut into thick slices
  • Peppers cut into chunks

Instructions

  • In a large bowl, combine the oil, lemon juice, vinegar and spices. Add in the cubed chicken and mix until coated. Place in the fridge to marinate while you prep the veggies. The chicken can be marinated overnight for ideal flavor!
  • Dice your vegetables into large chunks then drizzle with a little oil.
  • Slide the marinated chicken onto skewers, alternating with vegetables.
  • Preheat the grill to medium heat and grill for 8-10 minutes per side or until chicken is cooked through.
  • Remove kabobs from the grill and serve immediately. Enjoy!
