Grilled Salmon with Mango Salsa
Once the warmer weather hits, I can't wait to break out the grill. Nothing compares to the flavor of grilled food, it keeps all the mess out of the kitchen, AND my husband gets bonus points because he usually takes care of the grilling! That's a win/win all around 😉
Grilling salmon is a family favorite and super easy. Between the salmon marinade and the fresh mango salsa, this dinner is incredibly delicious! Of course if the weather isn't good, or you don't have a grill, you can make this meal easily indoors using your oven broiler.

Now, let's talk about this mango salsa! This salsa is a light and refreshing topping for the salmon, but it's also just as tasty with some tortilla chips! It has a sweet flavor from the mangoes, tang from the lime juice, crunch from the crisp cucumbers, and go ahead and add a jalapeno if you like a little spice.
You can either chop the salsa ingredients while the salmon is marinating or make the it up to 3 days ahead of time to make this easy meal even quicker.
Ok, time to fire up the grill and let's eat!
Grilled Salmon with Mango Salsa
Ingredients
Mango Salsa
- 1 Mango diced
- 1 cup English Cucumber diced
- ⅓ cup Red Onion diced
- ⅓ cup Cilantro chopped
- 1 Lime juiced
- 2 teaspoon olive oil
- ¼ teaspoon Salt or to taste
- ½ Jalapeno seeded and diced, optional
Salmon Marinade
- 2 tablespoon Oil
- 2 cloves Garlic minced
- 1 Lime juiced
- Salt & Pepper to taste
Instructions
- Whisk together the ingredients for the salmon marinade in a small bowl.
- Place salmon in a baking dish and pour the marinade on top. Cover and place in fridge to marinate for at least 30 minutes.
- Meanwhile, combine all ingredients for the salsa together in a bowl-set aside.
- Preheat the grill to medium/high heat. Brush grates with oil if needed.
- Grill salmon skin side down for about 6-8 minutes, keeping the lid closed as the fish cooks. Pour on any leftover marinade while cooking. Then flip to the other side for the last 1-2 minutes for browning. You'll know the salmon is done when it flakes easily.
- Top with mango salsa and serve with desired sides.
