How to Make Gluten Free Sheet Pan Lasagna

Start by preheating your oven to 400°F. Lightly grease a 13 x 18-inch rimmed sheet pan with olive oil or nonstick cooking spray.

If you're using regular gluten free lasagna noodles rather than oven-ready noodles, cook them according to the package directions. Drain and set aside.

Prepare the spinach. Thaw the frozen spinach and squeeze out as much excess moisture as possible. This is important because too much liquid can make the lasagna watery.

Make the ricotta mixture. In a medium bowl, combine the ricotta cheese, squeezed spinach, ¼ cup Parmesan cheese, Italian seasoning, garlic powder, salt, and black pepper. Stir until well combined.

Now it's time to assemble your gluten free sheet pan lasagna!

Start Layering. Spread a thin layer of meat sauce over the bottom of the prepared sheet pan. Arrange a layer of gluten free lasagna noodles over the sauce, breaking them as needed so they fit across the pan.

Add the filling. Spread or spoon some of the spinach and ricotta mixture over the noodles. Add another layer of marinara sauce and sprinkle with mozzarella cheese.

Tips for Making the Best Gluten Free Lasagna

Use a rimmed sheet pan

A rimmed baking sheet is important because it keeps the sauce and melted cheese from spilling over the sides. A standard half-sheet pan works well.

Don't skimp on the sauce

Gluten free noodles can sometimes absorb more moisture than traditional pasta, so make sure each layer has enough sauce. This helps prevent dry lasagna.

Let it rest before slicing

It's tempting to cut into the lasagna immediately, but giving it about 10 minutes to rest helps the layers set. You'll get much cleaner slices.

  • 2 Boxes Gluten Free No Boil Lasagna Noodles about 15 sheets
  • 48 oz Marinara Sauce
  • 2 Eggs
  • 15 oz Ricotta Cheese
  • 1 cup Parmesan Cheese
  • 1 Package Chopped Frozen Spinach Thawed and Drained
  • 4 cups Mozzarella Cheese
  • 1 teaspoon Italian Seasoning
  • ½ teaspoon Garlic Powder

Method

  7. Top with the rest of the lasagna sheets, remaining marinara, mozzarella and remaingin ½ cup parmesan cheese.
  8. Cover tightly with foil and bake for 20-25 minutes.
  9. Remove foil and bake another 5-10 minutes, until the noodles are tender and cheese is bubbly.
  10. Let rest for 10 minutes before slicing and serving.
