This Creamy Tuscan Garlic Chicken and Pasta is a quick skillet dinner that's packed with flavor. It's loaded with your favorite gluten free pasta, fresh garlic, sun-dried tomatoes and spinach that comes together in 30 minutes.

Creamy Tuscan Chicken and Gluten Free Pasta

Looking for a dinner that will make everyone fall in love at first bite? This creamy Tuscan chicken recipe is very similar to the Marry Me Chicken Pasta that went viral for good reason!

This right here is the ultimate creamy comfort food! In our Italian house, there's nothing better than pasta night. And what's even better? Pasta smothered in a flavorful creamy garlic sauce! 

There is just something so indulgent and satisfying about a cream sauce. This recipe is made with an unsweetened plant-based milk to make it dairy-free. We love to use Good Karma Flax Milk with Protein for cooking since it has a great neutral flavor and is super creamy. Add in fresh minced garlic, Italian seasoning, sun-dried tomatoes & spinach. Believe me, this sauce is bursting with flavor!

All you have to do is saute the chicken, add in the pasta and sauce ingredients, let it simmer while the flavors come together, then it's ready to serve!

Ingredients Needed to Make this Easy Gluten Free Dinner

  • Gluten Free Pasta. Use your favorite brand of gluten free pasta. There are so many options now, but we love Barilla or Jovial.
  • Chicken Breasts. Cut into bite-sized pieces.
  • Broth. Chicken or Vegetable broth both work well.
  • Butter or Oil. I like the flavor that butter adds to this recipe but you can also use a neutral tasting oil such as avocado.
  • Garlic. Lots of fresh garlic cloves!
  • Onion
  • Sun-Dried Tomatoes. Be sure to reserve 2 tablespoon of the oil from the jar because it goes into the sauce!
  • Fresh Baby Spinach. Watch how 3 cups of spinach leaves magically disappear!
  • Milk. Whole milk or half and half make this recipe extra creamy. I use Good Karma Flaxmilk with protein to keep this recipe dairy-free.
  • Cornstarch. Just a little bit of cornstarch is needed to help thicken up the sauce.
  • Seasoning. Italian Seasoning, salt & pepper.

How to Make this Delicious Chicken and Pasta Dinner

First, season chicken with a little salt and pepper then in a large skillet, heat oil and cook the chicken on medium heat until browned. Add the diced onion to the pan and cook 2-3 minutes until softened.

Add 2 tablespoon reserved oil from the sun-dried tomatoes to the pan and then add your minced garlic. Stirring often for about 1 minute so you do not burn the garlic.

Next, add broth to the pan along with the uncooked pasta. Bring to a boil, then reduce heat to a simmer. Cover and cook about 10 minutes until pasta is cooked, stirring occasionally.

Once the pasta is al dente, whisk together the milk and 1 tablespoon cornstarch. Pour into the skillet and stir until thickened.

Add the spinach to the pan. Stir until wilted. Sprinkle with Italian Seasoning, salt & pepper. Stir in sun dried tomatoes then serve immediately.

  • 2 cups Gluten Free Pasta rotini or penne
  • 2 Chicken Breasts cut into bite-sized chunks
  • 2 tablespoon Butter/oil Dairy-Free: Earth Balance Vegan Butter or oil
  • ½ Onion diced, should be about ⅓ cup
  • 4 cloves Garlic minced
  • 2 teaspoon Italian Seasoning
  • 2½ cups Broth
  • 7oz Sun-Dried Tomatoes(in oil) Chopped & Drained; reserve 2 tablespoon oil from the jar
  • 3 cups Spinach Leaves
  • ½ teaspoon Salt or to taste
  • Pepper to taste
  • ½ cup Milk Dairy-Free: Unsweetened plant-based milk. Coconut milk will alter the taste.
  • 1 tablespoon Cornstarch
