About this Recipe

This Stuffed Pepper Soup is actually an adaptation of my popular Unstuffed Pepper Skillet recipe. I took all the flavors you all love and transformed them into a warm, cozy soup perfect for cooler weather. While the skillet version is great for quick weeknight meals, this soup adds that extra comfort factor with a additonal broth and slow simmered flavor. Ingredients You'll Need

  • 1 lb ground sausage; feel free to swap ground beef or ground turkey.
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 bell peppers (any color), diced
  • 3 cloves garlic, minced
  • 1 can (28 oz) tomato sauce
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable broth
  • 2 cups cooked rice
  • 2 teaspoons Italian seasoning
  • Salt and pepper, to taste
  • Optional: shredded cheese for topping (if not dairy-free) and chopped fresh parsley

How to Make Stuffed Pepper Soup

1. Brown the Meat

In a large pot or Dutch oven, heat olive oil over medium heat. Add the ground sausage and cook until browned, breaking it apart as it cooks.

2. Add the Vegetables

Stir in the diced onion, bell peppers, and garlic. Sauté for 5-7 minutes, or until the vegetables begin to soften. This step helps build the deep flavor that makes stuffed pepper soup so comforting.

3. Add Broth and Tomatoes

Pour in the broth, diced tomatoes, and tomato sauce. Stir well to combine. Add Italian seasoning, salt, and pepper.

4. Simmer the Soup

Bring the soup to a gentle boil, then reduce the heat and let it simmer for 20-25 minutes. This allows the peppers to soften fully and the flavors to blend together.

5. Add the Rice

Stir in the cooked rice right before serving. This keeps the rice from absorbing too much liquid and prevents the soup from becoming overly thick.

6. Serve and Enjoy

Ladle the soup into bowls and top with fresh parsley or shredded cheese if desired.

Can Stuffed Pepper Soup Be Made in the Crockpot?

It sure can! Here are Slow Cooker Instructions for Stuffed Pepper Soup

  1. Brown the meat first:
    In a skillet over medium heat, cook the ground meat until browned. Drain excess fat if needed.
  2. Add ingredients to the slow cooker and Stir everything together to fully combine.
  3. Cook on low 6-7 hours or high 3-4 hours.
  4. Add the rice at the end:
    Stir in the cooked rice during the last 10-15 minutes of cooking. This keeps it from absorbing too much liquid or getting mushy.

Tips for the Best Stuffed Pepper Soup

  • Add rice only when serving to prevent it from getting mushy.
  • Swap lean ground beef, or turkey for a lighter version.
  • If you want a thicker soup, let it simmer a bit longer to reduce.
  • Stir in a little cream or coconut milk for a creamy variation.

Ingredients

  • 1 lb Ground Sausage can swap ground beef or ground turkey
  • 1 small Onion diced
  • 2 Bell Peppers any color
  • 2 cloves Garlic minced
  • 1 can Diced Tomatoes 14.5 oz
  • 15 oz Marinara Sauce
  • 4 cups Vegetable Broth
  • 2 teaspoon Italian Seasoning
  • 2 cups Cooked Rice
  • Salt and Pepper to taste

Optional for Serving

  • Shredded Cheddar Cheese
  • Chopped Fresh Parsley

Instructions

  • In a large pot or Dutch oven, cook the meat until browned.
  • Add diced onion and chopped bell peppers. Cook until softened.
  • Stir in garlic, Italian seasoning, salt, and pepper.
  • Pour in the diced tomatoes, tomato sauce, and beef broth. Stir well.
  • Reduce heat and let the soup simmer for about 25 minutes so the flavors deepen and the peppers become tender.
  • Add your cooked rice near the end so it stays fluffy and doesn't over-soften.
  • Garnish with parsley or a sprinkle of shredded cheese. Enjoy!
