This easy gluten free sheet pan lasagna has layers of noodles, ricotta, spinach and mozzarella then baked until bubbly and golden.

Ingredients
  

  • 2 Boxes Gluten Free No Boil Lasagna Noodles about 15 sheets
  • 48 oz Marinara Sauce
  • 2 Eggs
  • 15 oz Ricotta Cheese
  • 1 cup Parmesan Cheese
  • 1 Package Chopped Frozen Spinach Thawed and Drained
  • 4 cups Mozzarella Cheese
  • 1 teaspoon Italian Seasoning
  • ½ teaspoon Garlic Powder
  • ½ teaspoon Salt
  • ¼ teaspoon Pepper

  1. Preheat oven to 400°F. Grease a 13 x 18-inch rimmed sheet pan.
  2. Thaw the spinach and squeeze out as much moisture as possible.
  3. Mix ricotta, eggs, spinach, ½ cup Parmesan, Italian seasoning, garlic powder, salt, and pepper in a bowl.
  4. Spread a thin layer of marinara sauce over the sheet pan.
  5. Arrange a layer of no-boil gluten free lasagna noodles over the sauce.
  6. Add a layer of the spinach-ricotta mixture, marinara sauce, and ½ of the mozzarella cheese evenly over the ricotta mixture.
  7. Top with the rest of the lasagna sheets, remaining marinara, mozzarella and remaingin ½ cup parmesan cheese.
  8. Cover tightly with foil and bake for 20–25 minutes.
  9. Remove foil and bake another 5–10 minutes, until the noodles are tender and cheese is bubbly.
  10. Let rest for 10 minutes before slicing and serving.
