- In a large bowl, combine the oil, lemon juice, vinegar and spices. Add in the cubed chicken and mix until coated. Place in the fridge to marinate while you prep the veggies. The chicken can be marinated overnight for ideal flavor!
- Dice your vegetables into large chunks then drizzle with a little oil.
- Slide the marinated chicken onto skewers, alternating with vegetables.
- Preheat the grill to medium heat and grill for 8-10 minutes per side or until chicken is cooked through.
- Remove kabobs from the grill and serve immediately. Enjoy!
