Ingredients
  

  • cups Gluten Free 1:1 Flour
  • 1 Egg
  • ½ cup Oil neutral tasting oil, I like to use avocado oil
  • ½ cup Granulated Sugar
  • ¼ cup Packed Brown Sugar
  • ½ teaspoon Baking Powder
  • ½ teaspoon Baking Soda
  • ½ tsp Salt
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Ground Cinnamon
  • 2 cups Shredded Zucchini
  • 1 cup Chocolate Chips

Method
 

  1. Preheat oven to 350°.
  2. In a large bowl, mix together the wet ingredients then add the dry ingredients to form a batter. Fold in the shredded zucchini and stir in the chocolate chips.
  3. Pour the batter into a greased or lined muffin tin then bake for about 25 minutes.
  4. Cool before serving.
