  • Avacado Oil

  • Brown Sugar

Now Let's Get to the Baking Steps

This simple recipe only has a few steps! The first being to preheat your oven to 350 degrees.

While your oven preheats, take a muffin tin and set it aside. In a large bowl, mix together the wet ingredients then add the dry ingredients to form a batter. Once you have your mixture, fold in the shredded pieces of zucchini and stir in the chocolate chips.

Pour the batter into your greased muffin tin and place in the oven to bake for about 25 minutes. And just like that you have your Gluten Free Chocolate Chip Zucchini Muffins rady to go for a snack, dessert or treat any time of day!

Optional Variations

  • Want a loaf instead of muffins? Pour the batter into a greased loaf pan and bake for 45-55 minutes to make a chocolate chip zucchini loaf.

  • 1½ cups Gluten Free 1:1 Flour
  • 1 Egg
  • ½ cup Oil neutral tasting oil, I like to use avocado oil
  • ½ cup Granulated Sugar
  • ¼ cup Packed Brown Sugar
  • ½ teaspoon Baking Powder
  • ½ teaspoon Baking Soda
  • ½ tsp Salt
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Ground Cinnamon
  • 2 cups Shredded Zucchini
  • 1 cup Chocolate Chips

  • Muffin Tin

Method
 

  1. Preheat oven to 350°.
