Why you'll love these healthy gluten free zucchini muffins!

The combination of chocolate and zucchini muffins may sound unusual to some, but zucchini adds moisture and nutrients without overpowering the flavor. Plus, it’s a great way to sneak vegetables into your diet (or your kids’!). The chocolate chips melt into the batter to create gooey pockets of sweetness, balancing the mild taste of zucchini.

    Ingredient List!

My guess is that most of you will already have some of these ingredients in your house, making your grocery trip much easier! Here is what you'll need...

    • Gluten Free Flour
    • Egg
    • Avacado Oil
    • Granulated Sugar
    • Brown Sugar
    • Baking Powder
    • Baking Soda
    • Salt
    • Vanilla Extract
    • Ground Cinnamon

Now Let's Get to the Baking Steps

This simple recipe only has a few steps! The first being to preheat your oven to 350 degrees.

While your oven preheats, take a muffin tin and set it aside. In a large bowl, mix together the wet ingredients then add the dry ingredients to form a batter. Once you have your mixture, fold in the shredded pieces of zucchini and stir in the chocolate chips.

Pour the batter into your greased muffin tin and place in the oven to bake for about 25 minutes. And just like that you have your Gluten Free Chocolate Chip Zucchini Muffins rady to go for a snack, dessert or treat any time of day!

    Optional Variations

    • Want a loaf instead of muffins? Pour the batter into a greased loaf pan and bake for 45–55 minutes to make a chocolate chip zucchini loaf.
    • For extra texture and nutrition, toss in a handful of chopped walnuts or pecans.
    • Use dairy-free chocolate chips for a completely dairy-free treat.
