Ingredients
  

  • 4 cups Shredded Coconut Flakes Unsweetened
  • 5 Egg Whites
  • ½ cup Sugar
  • 1 tablespoon Pure Vanilla Extract
  • ¼ teaspoon Salt

  • Melted chocolate for dipping

Method
 

  1. Preheat oven to 350.
  2. In the bowl of a stand mixer, beat egg whites with sugar until the mixture is frothy.
  3. Stir in coconut, vanilla extract and salt.
  4. Using a measuring spoon or a mini cookie scoop, form heaping tablespoons of the cookie mixture into mounds on the prepared baking sheets. Bake for 12-15 minutes or until coconut looks golden and toasted.
  5. Cool completely and enjoy!
