- Combine sugar and butter in a mixing bowl. Beat at medium speed until creamy.
- Add egg yolks and vanilla extract. Continue beating, scraping the edges as needed.
- Gradually add flour and salt. Beat at low speed until well mixed and a dough is formed.
- Cover and refrigerate 1 hour or until firm.
- Heat oven to 350°
- Roll out half of the dough at a time, keeping the other half refrigerated so it doesn't soften.
- Spread dough to ¼ inch thickness, then cut with cookie cutters. Place on ungreased baking sheets.
- Bake 8-10 minutes until edges are lightly browned.
- Let cool completely before frosting.
