Ingredients
  

Shortbread
Caramel Layer
  • 6 tablespoon Butter
  • ¾ cup Brown Sugar
  • 4 tablespoon Milk
  • ¼ teaspoon Salt
Chocolate
  • 2 cups Chocolate Chips
  • 1 tablespoon Oil

Method
 

Make the Shortbread
  1. Preheat oven to 350°
  2. Place shortbread ingredients in a food processor until a dough forms.
  3. Press dough into a parchment lined 8x8 baking pan then bake for 20 minutes.
Make the Caramel Layer
  1. While the shortbread is baking, add the caramel ingredients to a stovetop pan. Bring to a simmer and whisk until thickened.
  2. Once the shortbread is cooled, pour the caramel evenly over the crust then place in the freezer to set.
Make the Chocolate Layer
  1. Melt the chocolate chips and oil together in a microwave-safe bowl or over a double boiler. Stir until smooth.
  2. Once the caramel layer is set, remove from the pan and slice into bars.Dip bars into melted chocolate, place on a parchment lined tray and place back in the fridge until set.
