- Preheat oven to 375°. Melt butter in the bottom of a cast iron skillet while the oven preheats. Remove from the oven before the butter starts to brown.
- Toss peaches in a large bowl with brown sugar and cinnamon. *If your peaches are extra ripe & juicy, add ¼ cup flour or 2 tablespoon cornstarch to thicken.
- In a separate bowl, mix flour, sugar, baking powder and salt. Slowly add milk stirring until a smoothe batter forms.
- Pour flour mixture over the melted butter, then pour the peach mixture on top. DO NOT MIX!
- Bake at 375° for about 40 minutes or until golden brown and center is set.
- Serve warm topped with vanilla ice cream. Enjoy!
