This Healthy Harvest Chicken Salad is loaded with flavor from apples, celery and dried cranberries. It's a delicious Fall twist on a classic that's great for an easy lunch served over lettuce or on gluten-free bread.

Ingredients
  

  • 2 cups Shredded Cooked Chicken Boil and shred 2 chicken breasts or use an already cooked rotisserie chicken.
  • 1 Apple diced
  • 1 Celery Rib diced
  • ½ cup Dried Cranberries
  • ½ cup Plain Greek Yogurt Use unsweetened Plant Based for Dairy Free
  • ¼ cup Mayo
  • 3 teaspoon Apple Cider Vinegar
  • ½ teaspoon Salt more or less to taste
  • ¼ teaspoon Pepper
  • ¼ teaspoon Garlic Powder
  • ¼ teaspoon Paprika
Optional
  • ¼ cup Chopped Nuts Pecans, pistachios, walnuts or any kind you like or have on hand!
  • ¼ teaspoon Ground Cayenne Powder for a little spice!

Method
 

  1. In a medium size bowl, add the shredded chicken, apples, celery, cranberries, salt, pepper and garlic powder. Toss to combine.
  2. In a small bowl, add the mayo, yogurt, vinegar, salt, pepper and garlic powder. Stir to combine and add to the chicken. Toss everything together until mixed well.
  3. Refrigerate until ready to eat or can be stored in the fridge for up to 5 days. Serve over lettuce, a gluten-free tortilla wrap, bread, or crackers.
