Homemade Choco Tacos

This copycat recipe of the nostalgic treat can be easily recreated at home and made gluten-free too! They consist of a waffle cone "taco", then stuffed with ice cream and dipped in melted chocolate.

Ingredients
  

  • Homemade Gluten-Free Pizzelles
  • 1-2 pints So Delicious Dairy Free Ice Cream we used Very Vanilla Cashew Milk
  • Enjoy Life Foods Chocolate Chunks
  • 1-2 teaspoon coconut oil
  • chopped nuts, or sprinkles for topping

Method
 

  1. Make Pizzelles according to directions 
    one at a time
    (unless you have a helper to help fold the second pizzelle before it cools). Instead of letting cool flat, fold them into "taco" shaped shells. Hold for a few seconds until they start to cool and stay formed. Use a kitchen towel or gloves if they are too hot!
  2. Once completely cool, fill with your choice of ice cream and put them in the freezer to keep cold.
  3. In the mean time, on low heat, melt chocolate chunks with 1-2 teaspoon of coconut oil on the stovetop.
  4. Dip the shells in the chocolate, or use a basting brush to paint on the chocolate.
  5. Sprinkle with chopped nuts, or get festive with some colorful sprinkles!
  6. Store in the freezer until ready to serve.
