- Make Pizzelles according to directions one at a time(unless you have a helper to help fold the second pizzelle before it cools). Instead of letting cool flat, fold them into "taco" shaped shells. Hold for a few seconds until they start to cool and stay formed. Use a kitchen towel or gloves if they are too hot!
- Once completely cool, fill with your choice of ice cream and put them in the freezer to keep cold.
- In the mean time, on low heat, melt chocolate chunks with 1-2 teaspoon of coconut oil on the stovetop.
- Dip the shells in the chocolate, or use a basting brush to paint on the chocolate.
- Sprinkle with chopped nuts, or get festive with some colorful sprinkles!
- Store in the freezer until ready to serve.
