Homemade Choco Tacos
We celebrated my son's 13th birthday recently and it happened to fall on his favorite day of the week- Taco Tuesday! I thought I'd get creative and do something special for his big day. Instead of a birthday cake, I made homemade gluten-free Choco Tacos!
What is a Choco Taco?
I have so many memories of eating Choco Tacos when I was a kid, so decided to create a homemade version that our whole family could enjoy. If you don't remember this fun dessert, then I am clearly showing my age! Either way, this is a very simple dessert to make as long as you have a pizzelle maker or a flat waffle iron works great too.
Choco Tacos consist of a waffle cone "taco", then stuffed with ice cream and dipped in melted chocolate. Traditionally topped with chopped nuts, but I chose sprinkles since I was making these for a birthday. The original Klondike Choco Tacos have recently been discontinued, but you can easily recreate this nostalgic treat at home and make them gluten-free!
What Ingredients Do I Need to Make this Fun Dessert Recipe
You'll first need to make a waffle cone "taco" shell using my Gluten-Free Pizzelle recipe. For this you'll need:
- Gluten-Free Bisquick
- Butter
- Eggs
- Sugar
- Vanilla Extract
To fill the tacos:
- Ice Cream. Fudge swirl to be specific, but you can use any flavor you like!
- Melted Chocolate
- Topping Ideas: Sprinkles, chopped nuts, shredded coconut
After you make the gluten-free pizzelle recipe, just fill with ice cream, add chocolate and your favorite toppings. You now have a DESSERT TACO that no one will forget anytime soon!

Homemade Choco Tacos
Ingredients
- Homemade Gluten-Free Pizzelles
- 1-2 pints So Delicious Dairy Free Ice Cream we used Very Vanilla Cashew Milk
- Enjoy Life Foods Chocolate Chunks
- 1-2 teaspoon coconut oil
- chopped nuts, or sprinkles for topping
Instructions
- Make Pizzelles according to directions one at a time(unless you have a helper to help fold the second pizzelle before it cools). Instead of letting cool flat, fold them into "taco" shaped shells. Hold for a few seconds until they start to cool and stay formed. Use a kitchen towel or gloves if they are too hot!
- Once completely cool, fill with your choice of ice cream and put them in the freezer to keep cold.
- In the mean time, on low heat, melt chocolate chunks with 1-2 teaspoon of coconut oil on the stovetop.
- Dip the shells in the chocolate, or use a basting brush to paint on the chocolate.
- Sprinkle with chopped nuts, or get festive with some colorful sprinkles!
- Store in the freezer until ready to serve.
