Ingredients
  

  • cup Gluten Free 1:1 Flour
  • 1 cup Gluten-Free Cornmeal*
  • 2 teaspoon Baking powder
  • ½ teaspoon Salt
  • 4 tablespoon Sugar
  • 2 Eggs
  • 1 cup Milk(use plant-based for DF) add 2 teaspoon apple cider vinegar to make buttermilk.
  • cup Oil I used avocado

Method
 

  1. Preheat oven to 400°, grease an 8x8 baking dish, pie pan or oven safe iron skillet
  2. Whisk eggs, sugar and milk together in a medium size bow.
  3. Add flour, corn meal, baking powder and salt until combined.
  4. Stir in the oil and mix well.
  5. Pour the batter into the prepared pan and bake 20-25 minutes until lightly browned on top
  6. Serve warm and add a touch of butter and/or drizzle of honey if desired.
