These gluten-free Pumpkin Pie Parfaits are an easy, no bake dessert that tastes just like pumpkin pie in a cup! They are super kid-friendly and can easily be made ahead of time.

Ingredients
  

Pumpkin Pie Filling
  • 15 oz Pumpkin Puree
  • 1 cup Whipped Topping Save the remainder for layering.
  • 1.5 teaspoon Pumpkin Spice
  • ½ teaspoon Vanilla Extract
  • ¼ teaspoon Salt
Additional Ingredients
  • Schar Gluten Free Shortbread Cookies crumbled
  • Remaining Whipped Topping

Method
 

  1. Prep small cups or mason jars for the parfaits.
  2. In a large bowl, mix together the ingredients for the pumpkin pie filling.
  3. Start by adding crumbled cookies to the bottom of a glass. Then a spoonful of the pumpkin pie filling, and finally a scoop of whipped topping. Continue layering until you fill the individual serving cups.
  4. Keep covered and refrigerated until serving. Before serving, garnish with a cookie then grab a spoon and dig in!
