These creamy gluten free Pumpkin Pie Parfaits are an easy, no-bake dessert layered with a pumpkin spice filling, whipped cream, and crunchy cookie crumbs. A light and festive alternative to traditional pumpkin pie that's perfect for Thanksgiving or fall gatherings!

Ingredients You'll Need to Make These Easy Pumpkin Pie Parfaits

  • Schar Gluten-Free Shortbread Cookies. These cookies delicious gluten free cookies get crumbled, and the flavor resembles the "crust" part of the pie.
  • Whipped Topping. You can't have pumpkin pie without whipped cream!

No Bake Pumpkin Pie Filling

  • 15 oz Pumpkin Puree. Be sure not to use Pumpkin PIE Filling.
  • 1 cup Whipped Topping. Save the remainder for layering.
  • 1.5 tsp Pumpkin Spice
  • ½ tsp Vanilla Extract
  • ¼ tsp Salt

How to Make This Delicious No Bake Fall Dessert

I'm going to tell you exactly how to easy it is to make and assemble these flavorful Fall parfaits!

  • Prep small cups or mason jars for the parfaits.
  • Then, in a large bowl, mix together the ingredients for the pumpkin pie filling.
  • Start by adding the crumbled shortbread cookies to the bottom of your glass.
  • Next, add a spoonful of the pumpkin pie filling, and finally a scoop of whipped topping.
  • Continue layering until you fill all the individual serving cups. Keep covered and refrigerated until serving.
  • Before serving, garnish with a cookie then grab a spoon and dig in!

Make It Your Own!

  • Swap the whipped cream for coconut whipped cream for a dairy-free option.
