These Chocolate Raspberry Cut-Out Cookies are the perfect sweet treat to make for Valentine's Day! They're easily made with Sweet Loren's Gluten-Free Fudgy Brownie Cookie Dough then spread with a simple homemade raspberry frosting. Top the cookies with a fresh raspberry and a little chocolate drizzle to make them extra pretty!

Gluten-Free Chocolate Raspberry Cookies

Valentine's Day is right around the corner which means you need chocolate recipes, and you're going to love these cookies! This chocolate and raspberry combo is a match made in heaven and is bursting with delicious flavors!

Using pre-made Sweet Loren's cookie dough makes the baking process super easy! The dough is rich and fudgy and holds its shape well when using it as a cut-out cookie recipe. Sweet Loren's dough is not only gluten-free but vegan, non-gmo and made with only clean ingredients.

The cookies are then topped with a pop of raspberry flavor from the frosting, fresh raspberry garnish and then yummy chocolate drizzle finishes them off.

How to Make This Easy Chocolate Raspberry Cookie Recipe

You only need a few ingredients to make these cookies. You'll need one package of Sweet Loren's Fudgy Chocolate Cookie Dough. Go ahead and use 2 packages if you are making these cookies for a crowd or a Valentine's Day party!

For the raspberry frosting you'll need:

  • Butter. Use Earth Balance butter to keep these cookies vegan or for dairy allergies/intolerance.
  • Confectioner's Sugar
  • Raspberry Jam. I used Smucker's Natural Raspberry Spread. This gives the icing the pink color and subtle raspberry flavor.

Garnishes

  • Fresh Raspberries
  • Chocolate chips to melt for a drizzle
Sweet Loren's gluten-free chocolate raspberry cookies for Valentine's Day

Start by softening the pre-made cookie dough at room temperature for at least 30 minutes until easily moldable. Since Sweet Loren's Dough comes in easy "place and bake" individual cookie portions, you will want to combine all the dough into one ball.

On a parchment lined baking sheet, flatten the dough with a rolling pin until it is only about ¼ inch thick. Using cookie cutters, cut the dough into shapes. I used hearts since Valentine's Day is soon but you can make them into whatever shape you want! Once all cookies are ready, bake according to the package directions.

*Alternatively, you could make one GIANT cookie instead of individual size cookies! Baking time may increase a few minutes, but everything else would stay the same.

How to Make the Homemade Raspberry Frosting

While the cookies are baking, it's time to make the raspberry frosting! Add softened butter, sugar and raspberry jam to a mixing bowl. Start mixing on low and then increase speed until a light and fluffy frosting forms.

Once the cookies are cooled, spread your desired amount of frosting onto each cookie, then top with a fresh raspberry in the center.

Finally, melt some chocolate chips to create a pretty drizzle across each cookie.

These cookies can be stored in the refrigerator for up to 3-4 days, but I can guarantee you won't have any leftovers!

  • 1 package Sweet Loren's Fudgy Chocolate Cookie Dough
Raspberry Frosting
  • 4 tablespoon Butter softened; use Earth Balance for vegan/dairy-free
  • 1 cup Confectioner's Sugar
  • 2 tablespoon Natural Raspberry Jam
Garnish
  • 1 pint Fresh Raspberries
  • Chocolate Chips use Nestle Allergen Free or Enjoy Life Foods for vegan/dairy-free

  • Cookie Cutters
  • Stand or Hand Mixer

Method
 

Cookies
  1. Bring cookie dough to room temperature for about 30 minutes or until softened and moldable.
  2. Combine all individual portions into one large ball. On a parchment lined cookie sheet, flatten dough to ¼ inch thickness. Keep it thin because if it's thicker, the cookies might lose their shape.
  3. Using a cookie cutter, makes shapes with the dough. Take any excess dough and use for more cookies. One package of dough should make about 12-14 cookies.
  4. Bake according to package directions and let cool after baking.
Raspberry Frosting
  1. Add softened butter to a medium size mixing bowl. Beat until light and fluffy. Add confectioners sugar and raspberry jam. Start slow, then increase speed until everything is well combined and a frosting consistency forms. *This is a small batch frosting recipe, if you are making more than 1 package of cookies, then double the recipe.
  2. Spread frosting onto each cookie then top with a fresh raspberry in the center of each cookie.
Chocolate Drizzle
  1. Add a couple tablespoons of chocolate chips to a microwave safe bowl or glass measuring cup. Microwave uncovered for 30 second intervals, stirring in between, until chocolate is soft enough to stir. Add 1 teaspoon of oil if you want the chocolate drizzle thinner.
  2. Using a spoon or the measuring cup, drizzle the chocolate over the cookies.

Notes

Instead of little heart cookies, you can make one big heart using the cookie dough! Baking time for the large cookie may be a little longer but everything else is the same.
