Ingredients
  

  • lb Brussels Sprouts trimmed and halved
  • 6 slices Bacon Cut into chunks
  • 2 tablespoon Olive Oil
  • ½ teaspoon Salt
  • ¼ teaspoon Pepper
  • ½ teaspoon Garlic Powder
  • ½ cup Pomegranate Seeds Add more if you like!

Method
 

  1. Set your oven to 400°F.
  2. Rinse, trim, and halve the Brussels sprouts. Pat them dry- this step helps them get crispy when roasting.
  3. In a large bowl, combine the Brussels sprouts, olive oil, salt, pepper, and garlic powder. Toss until evenly coated.
  4. Spread the Brussels sprouts on the baking sheet and scatter the chopped bacon pieces over the top.
  5. Roast for 20–25 minutes, stirring halfway through, until the Brussels sprouts are golden brown and the bacon is crisp.
  6. Transfer to a serving dish and sprinkle with fresh pomegranate seeds. If desired, drizzle lightly with balsamic glaze for extra flavor.
