- Set your oven to 400°F.
- Rinse, trim, and halve the Brussels sprouts. Pat them dry- this step helps them get crispy when roasting.
- In a large bowl, combine the Brussels sprouts, olive oil, salt, pepper, and garlic powder. Toss until evenly coated.
- Spread the Brussels sprouts on the baking sheet and scatter the chopped bacon pieces over the top.
- Roast for 20–25 minutes, stirring halfway through, until the Brussels sprouts are golden brown and the bacon is crisp.
- Transfer to a serving dish and sprinkle with fresh pomegranate seeds. If desired, drizzle lightly with balsamic glaze for extra flavor.
