How to Make One Pan Chicken Fajita Rice Skillet
1. Season the chicken
Cut the chicken breasts into strips or bite-sized pieces. Heat a large skillet over medium-high heat. Add the chicken in a single layer and cook for about 4-5 minutes, stirring occasionally, until browned on the outside. The chicken doesn't need to be completely cooked through yet. Season with salt and pepper.
2. Cook the peppers and onions
Add the sliced onion and bell peppers to the same skillet.
Cook for about 3-4 minutes, stirring occasionally, until the vegetables begin to soften.
Using the same skillet helps keep the cleanup to a minimum while also adding extra flavor from the browned chicken.
4. Add the rice and Seasonings
Stir the seasonings and the uncooked rice into the skillet. Mix well.
Cook for about a minute, stirring occasionally. This gives the rice a chance to lightly toast before adding the liquid.
5. Add the broth and tomato Sauce
Pour the gluten free chicken broth into the skillet.
Add the tomato sauce and the fajita seasoning. Stir everything together, scraping up any browned bits from the bottom of the skillet.

6. Cover and simmer
