  • ½ cup oil
  • 1-¼ cup granulated sugar
  • 3 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ½ cup unsweetened cocoa powder
  • ¾ cup gluten free all-purpose flour
  • ¾ teaspoon teaspoon salt

How to Make Gluten Free Chocolate Covered Strawberry Brownies

Step 1: Prepare the Brownie Batter

Preheat your oven to 350°F and line an 8x8 baking pan with parchment paper. This makes removing the brownies much easier once they're cooled.

In a large bowl, whisk together the oil, and sugar until smooth and glossy. Add the eggs and vanilla extract, whisking until fully combined. Stir in the cocoa powder, gluten free flour, and salt just until a thick brownie batter forms. Be careful not to overmix-this helps keep the brownies fudgy.

Step 2: Bake the Brownies

Pour the brownie batter into the prepared pan and spread evenly. Bake for 30-35 minutes, or until the center is just set and a toothpick inserted comes out with a few moist crumbs.

Allow the brownies to cool completely before adding the toppings. This step is key so the strawberries don't release excess moisture.

Step 3: Add the Strawberries

Once the brownies are fully cooled, arrange the strawberries in an even layer on top. Make sure the strawberries are completely dry. This helps the ganache adhere better and prevents a soggy topping.

Step 4: Make the Chocolate Ganache

Place the chocolate chips in a heat-safe bowl. Heat the heavy cream in a small saucepan just until it begins to gently simmer (do not boil).

Pour the hot cream over the chocolate and let it sit for 2-3 minutes. Stir until smooth and glossy. If needed, microwave for 10-15 seconds to fully melt the chocolate.

Step 5: Add Ganache & Set

Pour the chocolate ganache evenly over the strawberries, spreading gently with a spatula to fully cover them.

Refrigerate the brownies for at least an hour, or until the ganache is set. Once firm, lift the brownies out using the parchment paper and slice into squares.
