How to Make a Gluten Free Gingerbread Loaf

Step 1: Preheat and Prepare. Preheat the oven and grease your loaf pan.
Step 2: Mix Dry Ingredients
Step 3: Combine Wet Ingredients
Step 4: Mix, Pour and Bake. Pour batter into your prepared pan and bake for approx 45 minutes.
Step 5: Garnish with cream cheese frosting and enjoy!

  • 2 cups Gluten Free 1:1 Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • ⅔ cup Brown Sugar, packed
  • 2 Eggs
  • ½ cup Oil
  • ⅔ cup Molasses
  • ½ cup Water
  • 2 teaspoon Ground Ginger
  • 1½ teaspoon Ground Cinnamon
  • ½ teaspoon Nutmeg
  • ½ teaspoon Cloves
  • ½ teaspoon Salt
Cream Cheese Frosting
  • 1½ cups Confectioner's Sugar
  • 4 oz Cream Cheese softened
  • 1 teaspoon Vanilla Extract

Method
 

  1. Preheat oven to 350°.
  2. Mix all ingredients together in a large bowl until a smooth batter forms.
  3. Pour batter into a greased loaf pan and bake for approx 45 minutes.
  4. Let cool before frosting.
  5. In the meantime, make the cream cheese frosting. Add the cream cheese and vanilla extract to a large mixing bowl. Slowly add the confectioner's sugar and use an electric mixer until a smooth frosting forms.
